Day 6

Day 6 was another great day off of work. Did a big shop in Kensington again for dinner. I find that because I live so close, it’s easy for me to buy foods the same day that I’m going to cook them, and that way everything is as fresh as possible when I’m cooking.

Went to my trusty butcher, with my little tupperware, and they filled it up with some chicken legs, I also got more butter that comes in a compostable paper wrapping, and some eggs. I’m saving all my egg cartons for a DIY in February I’ll be sharing. Then I went to get some carrots, onion, celery, potatoes, apples and pears from the grocer nearby. The only waste I made from this entire shop was the twist tie the carrots came with. I have a lot of bag clips and elastic bands so I don’t ever find a use for twist ties.

The day was generally easy going, had a coffee with a friend, cleaned the house a bit, and drove around to do two bunz trades (If you don’t know what bunz is, check Day 3 where I talk a bit about it). I traded two paintings for two bath bombs. The person I traded with brought it for me in a compostable paper bag! I have tried letting people know I prefer no plastic so they don’t bring me plastic bags or plastic containers when doing a trade and most people have been really excited about the idea. The second trade was a vintage key hook I had for a lightly used candle.

I started making dinner around 5:30. Chicken noodle soup and potato latkes with homemade apple sauce; perfect for the crummy weather we had. I’ll put the recipes at the bottom if you’d like to make it! After dinner, Ryan and I went to our friend’s next door for some drinks, hangs and video games.

Chicken Noodle Soup (Serves 8):

Start by boiling 6 cups of water in a large pot. Chop up carrots, celery, one potato and one onion and add to the boiling water. Throw in 3 chicken legs, with the skin and cook for 20 minutes.When cooked all the way through, take them out, take the skin off and rip apart into smaller pieces. Add 1/2 cup of noodles or pasta, and leave to simmer for 12-15 minutes. Add salt and pepper to taste, and 1/2 teaspoon of oregano.
Super simple and easy to make in huge batches and store in mason jars for later.

Potato Latkes (serves 8):

Peel and shred 4 potatoes. I use a cheese grater for this. Put the potato shreds in a bowl of water, let them sit for a minute, and then strain. Wrap the shreds in a cloth towel and twist to get out any water. Add shreds, 4 eggs a dash of salt in a bowl and mix. In a large pan, add 1 tablespoon of olive or vegetable oil and put on medium heat. Place 2 tablespoons of potato mix at a time and flatten them out a bit. Fry on both sides and then serve.

Homemade Applesauce (serves 8):

Peeled and diced 4 red apples. Add 1/2 cup of water and 2 tablespoons of brown sugar in a pot to boil. Add apples and cook until soft. Once cooked, let it cool for 5-10 minutes and then blend. You can either use a blender, food processor, or you could also use a potato masher. This can also be canned for later use.
